Take out the 2nd old disk, put in the 2nd new disk, add it to the new array, let it sync. If at any point something bad happens, you have the old disks as backup. Once you boot up your NAS operating system (i.e. Unraid, TrueNAS, OpenMediaVault, etc.) you are going to manage the device from a web browser on your network. Speedy graphics are not needed and just add cost to your project. WebI've got a whole bunch of different drives from various builds that I would take from. I've got a new Seagate IronWolf 12TB NAS that I would probably use as the primary storage drive. I also have 2 extra NVMe M.2s (2 TB) and a couple of 1TB 3.5 drives as well.
